Chinese Chess

Not chess with different pieces. The board has a river across the middle that changes what several pieces may do, the generals are confined to a nine-point palace and may never face each other down an open file, and the cannon only captures by leaping over exactly one piece in between.

That last rule is the one that rewires a chess player’s instincts: an empty line is safe, and a line with one piece on it is a threat.
